February was full of many activities in addition to arranging doctor visits in the States, researching tickets, doing tests here when we could, etc.
Spencer had been asking to be taught how to cook - so we started taking advantage of kitchen time to teach him.
Spencer made the Quick Baguettes in the photo above almost completely by himself!
Josh taught Spencer how to fry eggs for breakfast.
Once every couple of years we have to replenish our supply of casings for sausage making. We ordered 2 kg of hog intestines, cleaned. Then we proceeded to clean them again, cutting away the parts that had holes in them.
It was a lot of work and VERY stinky.
But little by little we got them clean and ready for sausage day. We store them in brine in a container in the freezer.

Here is 25 kg (about 50 lb) of sausage ready to be stuffed into casings. We always add 15-25% fat because the meat here is so lean. We cut it up and grind it ourselves.
We add salt, pepper and a bit of brown sugar - that's it - then we stuff it into casings and smoke the sausages for 8 hours.
Josh & I helped organize and then attended a shindig with some government folks. We dressed up in our best traditional formalwear.
We have been working, little by little, on painting the cement back-yard walls. We painted the area under the roof white and it feel a lot brighter and cleaner now!
